Smoky Strawberry Smash

Served in a large old-fashioned glass

2 oz of a peat-forward Islay scotch, such as Ardbeg and Lagavulin
1 ounce fresh lemon juice
1 ounce simple syrup
2 medium, juicy strawberries, hulled
1 strawberry for garnish
1 small bouquet of mint for garnish
Optional: Club soda

Cocktail shaker or mason jar, muddler and a fine mesh strainer

Muddle strawberries well with simple syrup in the bottom of a shaker.
Add lemon juice, scotch and ice, and shake for 15 seconds
In your glass with fresh ice, fine-strain your cocktail. Optional, top with club soda.
Garnishing:
Gently smack your mint to release the oils, and give the bundled stems a twist to keep the bouquet shape.
Cut a thick slice across the length of the strawberry and add a notch to place it on the rim of your glass next to your mint

Enjoy! The smoke of the scotch is a fascinating pairing with strawberries.
